A visit to Topkapi Palace will show you the importance of fine cuisine in the life of the Sultans. The palace had huge kitchens where food was cooked for about ten thousand people each day. There was a cook specializing in each of the items like soup, pilafs, kebabs etc. So important was food in the royal life that the Ottoman military hierarchy had names like Soupmen for commanders, and Chief Cook, Baker etc. for other officials.
